Una dozzina le candidature pervenute. Il regolamento quest&rsquo;anno prevedeva la presentazione di un dossier particolarmente dettagliato e la commissione (costituita da Giancarlo Perbellini, presidente del concorso e titolare del ristorante Perbellini di Isola Rizza; Carlo Spinetti, presidente dell&rsquo;Associazione Promozione del Territorio e Antonio Santini, titolare del ristorante Dal Pescatore di Canneto sull&rsquo;Oglio) ha posto minuziosa attenzione nell&rsquo;esaminare ciascuna candidatura, vagliando, oltre alla professionalit&agrave; Dopo alcuni anni dedicati all&#39;insegnamento, il ritorno all&#39;originale vocazione di chef e l&rsquo;opportunit&agrave; di apprendere l&rsquo;arte da due grandi maestri quali Gualtiero Marchesi e Andrea Berton. Con il primo lavora all&#39;Hosteria dell&#39;Orso a Roma e al Casin&ograve; Les Princes di Cannes, del secondo &egrave; invece sous-chef da Trussardi alla Scala a Milano. &quot;Esperienze fondamentali per la mia formazione&quot;, spiega lo chef della Locanda Margon. &quot;<em>Se grazie a Marchesi ho appreso uno stile di cucina semplice basato sul rigore formale, sull&#39;essenzialit&agrave; e sull&#39;equilibrio, Berton mi ha dato una visione complessiva del ristorante e insegnato l&#39;importanza della precisione. Lungo la strada ha incontrato grandi maestri dell&rsquo;arte gastronomica italiana: da Gaetano Trovato ristorante Arnolfo di Colle di Val d&rsquo;Elsa, Siena (2 stelle Michelin) ha appreso l&rsquo;eleganza e la passione che contraddistinguono questo lavoro, da Antonio Guida ristorante Il Pellicano di Porto Ercole (2 stelle Michelin), la grande professionalit&agrave;, la disciplina e l&rsquo;organizzazione. Da cinque anni &egrave; sous chef al Mosaico, ristorante del Terme Manzi di Ischia, con Nino Di Costanzo (2 stelle Michelin).
